Recipes that promote fertility

 through healthy eating

 

Warm Chicken Salad

with Hazelnut dressing

(serves 2)

Simple to prepare, delicious and super healthy, this recipe has a great balance of nutrients to promote fertility:

  • chicken is excellent protein,
  • olive and hazelnut oils are healthy fats for the hormonal system and the
  • raw salad is a burst of vitamins, minerals and anti-oxidants

Ingredients
2 tbsp olive oil
2 tbsp hazelnut oil
1 tsp white wine vinegar
1 small garlic clove, crushed
1 tsp chopped fresh mixed herbs
115g baby spinach leaves
125g cherry tomatoes, halved
3 stalks spring onions, chopped
1 large or 2 small chicken breast fillets, skinned and cut into thin strips
celtic sea or himalayan salt and ground pepper

Method

DRESSING
Place the olive oil, 1 tbsp hazelnut oil, vinegar, garlic and herbs in a small bowl or jug and whisk
(or stir vigorously) together for a few minutes until thoroughly mixed. Set aside.

SALAD
Trim any long stalks from the spinach leaves, then place in a large serving bowl with the tomatoes
and spring onions, and toss together to mix.

CHICKEN
Heat the remaining hazelnut oil in a large frying pan, add the chicken and stir over a high heat for
7-10 minutes, ensuring it is cooked thoroughly (no pink in the middle).

To Serve

Scatter the chicken pieces over the salad, give the dressing a quick whisk to blend, then drizzle
over the salad and gently toss all the ingredients together to mix. Season to taste and serve
immediately.

Options

If you can't find spinach leaves, any other salad leaves work just as well.
This salad can also be served cold, if you either need to make it in advance or already have some
cooked chicken breast to use up.
